PJ Chang’s Inspired Beef Lettuce Wraps
Try out these warming, a little spicy PJ Chang’s inspired Beef Lettuce Wraps. It takes about only 20 minutes in the kitchen, and it’s a one-pan dinner! What can be better than a one-pan dinner??
To make it even quicker, buy the ginger that comes in the squeeze tube, but since it’s less flavorful than fresh, add in a teaspoon or two. Also, some grocery stores sell the Pero brand Sweet Mini Pepper Rings, so buy those to eliminate the use of a knife for this recipe. Quickly slice the green onions with a pair of scissors and you don’t even need a cutting board!
Makes 4 servings
1 tablespoon avocado or coconut oil
1 pound ground beef (90/10)
1 tablespoon Chinese five spice
1 teaspoon ground coriander
1/4 teaspoon sea salt
1/2 cup unsalted beef broth
2 tablespoons chili garlic sauce (for less spicy use 1 tablespoon)
2 tablespoons coconut aminos or low-sodium soy sauce
1 tablespoon freshly squeezed lime juice
2 teaspoons grated ginger
6 baby bell peppers, thinly sliced
1 cup matchstick carrots
1/2 cup chopped green onions, separate the dark green for garnish
Toasted Sesame Oil for Drizzling

12-16 butter lettuce leaves
Heat oil in a large skillet over medium-high heat, add the beef, Chinese five spice, coriander, and sea salt. Cook until the meat is browned and crumbly.
Meanwhile, in a medium bowl, whisk together the beef broth, chili garlic sauce, coconut aminos or soy sauce, lime juice, and ginger. Pour mixture over the beef and bring to a boil. Cook until the mixture reduces and thickens, about 5 minutes, stirring occasionally. Stir in the peppers, carrots, and green onions until just softened, about 2 minutes.
To finish, drizzle about 1 tablespoon of the toasted sesame oil and sprinkle with pine nuts and garnish with the dark green part of the green onion. Serve immediately.
