It’s not the typical spice-level for island cuisine – it’s not spicy, just enough to give a light little kick, but not wreck your tastebuds.
Caribbean Sheet Tray Dinner

Ingredients
- 4 chicken thighs
- 1 tablespoon Caribbean spice mix
- 1 green plantain, peeled and sliced into 8 even slices, about ½-inch
- 2 poblano peppers, cut into 1-inch pieces
- 1 cup grape tomatoes
- 1 red onion, cut into 1-inch pieces
- 1 cup dry white or jasmine rice
- 2 cups chicken broth
- 2 tablespoons chopped fresh cilantro
- Zest of 2 limes
- 1 tablespoon lime juice
Directions
- Step 1 Preheat oven to 425°. Line 2 rimmed baking sheets with parchment paper. Place the plantain slices and chicken onto the sheet pan. Spray with olive oil or avocado oil and sprinkle evenly with the Caribbean spice mixture.
- Step 2 Roast for 15 minutes or until the plantains are softened.
- Step 3 Add the peppers, onions and tomatoes onto the other sheet pan and spray with oil and season with salt and pepper.
- Step 4 Turn the plantains over, then using the bottom of a glass or measuring cup, smash the plantains to about ¼-inch thick. Place it back into the oven with the vegetables.
- Step 5 Roast for another 12 minutes until the chicken is cooked to an internal temperature of 165°
- Step 6 Meanwhile, add the chicken broth to a small saucepan and bring to a boil over medium high heat. Add the rice, bring back to a boil, cover and reduce heat to low and cook for 15 minutes until tender.
- Step 7 Remove the lid and fluff the rice with a fork. Add 2 tablespoons cilantro, lime zest and lime juice and season with salt and pepper to taste.
- Step 8 While the rice is cooking, make the mojo sauce. Recipe follows.
Cilantro-Parsley Mojo Sauce

Ingredients
- 2 limes, juiced (minus 1 tablespoon from above)
- ½ cup parsley leaves
- ½ cup cilantro leaves
- ¼ teaspoon ground cumin
- 2 tablespoons olive oil
- Salt & Pepper to taste
Directions
- Step 1 In the bowl of a food processor add the parsley, cilantro, cumin, lime juice, olive oil and salt and pepper. Chop until well blended and smooth with some smaller chunks.
*If you do not have a food processor, you can finely chop the parsley and cilantro, then mix all the ingredients together by hand or use a hand blender to bring it all together. Just keep in mind the texture will be a little different, but the flavor will be there.
