Baked Nachos and “Rotel”

Makes 4- 6 servings

 

It’s Super Bowl Sunday, y’all!!! I asked my friends what their favorite Super Bowl Sunday snack was and Rotel was the shocking winner followed behind wings and buffalo dip. Also, on the Today Show, they had a poll for the favorite snack and Nachos won. So I combined the two and added a little twist to make them just a little more nourishing! I do believe that indulgences are certainly worth-while, however, it’s always nice to have an indulgence that adds some nutrients and satisfaction! Enjoy the day and may your favorite team win! My favorite team seems to always win because I root for the advertisements!

 

1 pound 8-inch corn tortillas, cut into quarters

¾ teaspoon paprika

½ teaspoon sea salt

½ teaspoon onion powder

½ teaspoon ground coriander

½ teaspoon ground ancho chili pepper

½ teaspoon ground black pepper

¼ teaspoon ground cumin

1 tablespoon avocado oil

½ pound ground grass-fed beef (95%/5%)

1 Poblano pepper, chopped

2 medium tomatoes, chopped

2 cloves garlic, minced

1 cup heavy whipping cream

3/4 cup shredded pepper jack cheese

¾ cup shredded extra sharp cheddar cheese

Toppings: Sliced Avocado, Pickled Red onion, Cilantro, Chopped Fresh Chives

 

Preheat oven to 325° Arrange tortilla quarters on 3-4 sheet pans. Spray evening with avocado oil spray and sprinkle evenly with a pinch of salt and pepper. Bake for 20 minutes or until crisp.

 

Meanwhile, in a small bowl, stir together paprika, salt, onion powder, coriander, ancho, black pepper and cumin until combined. Heat oil a large skillet over medium high heat, add beef and spice mixture, breaking apart the beef and cooking until browned, about 5 minutes. Remove beef from pan with a slotted spoon into a bowl and set aside.

 

Add poblano pepper into the pan and cook for about 3 minutes or until softened. Add garlic and tomato and cook until softened, about 2 minutes. Add heavy cream and bring to a boil. Add cheeses and stir until melted, remove from heat.

 

Combine the tortilla chips onto one tray or a platter, top with beef then the cheese mixture. Lastly add any desired toppings and serve immediately.
