Roasted Radishes with Herb Butter

Makes 4 Servings

This recipe is a super simple, straight forward side that is surprisingly a delicious way to use extra radishes you bought for extra crunch in your salads. Now, you have two reasons to enjoy these little root vegetables!


3 cups radishes, quartered

Avocado Oil spray

1 tablespoon melted grass-fed unsalted butter

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh tarragon

1 tablespoon chopped fresh parsley



Preheat oven to 400°. Line a baking sheet with parchment paper. Spread radishes evenly. Spray with avocado spray. Roast for 10 minutes until tender and golden brown. In a medium bowl combine the melted butter and herbs; add radishes tossing to coat. Serve immediately.
