Shaved Fennel Beet Apple Salad
Makes 4 Servings
This salad only takes about 10 minutes to make and it is meant to increase the health of your gut! Did you know that fennel has properties in it that help to calm the muscles in your gut, especially when you’re feeling extra gassy? Apple cider vinegar also is a gut healing hack that the functional medicine world uses to help increase your stomach acid so that your stomach can break down the foods easily and can also help with blood sugar spikes!
1 small fennel bulb, trimmed, shaved thinly
1 medium golden or red beet, shaved thinly
1 large apple, shaved thinly
1 head butter lettuce, leaves separated
1/2 cup chopped parsley
3 tablespoons apple cider vinegar
1 tablespoon water
1 clove garlic, minced
2 teaspoons grated ginger
2 teaspoons honey
3 tablespoons extra-virgin olive oil
In a large bowl, toss together the fennel, beet, apple, lettuce and parsley until combined.
In a small bowl, whisk together the vinegar, ginger, garlic, honey, salt, and pepper until combined. Add the olive and whisk until combined. Drizzle over the salad and serve immediately.
*Add pan-seared chicken or salmon to the salad for some extra protein and a complete meal.
