Winter Grapefruit Salad

Makes 4 servings

Too many Christmas cookies this year because you don’t have the family to eat them all? Need a little balance post-Christmas? Try out this simple salad as a side or an appetizer for a luxurious dinner. Grapefruit are actually Winter fruits (October – June), so they taste the sweetest and are packed full of Vitamin C and A and other immune-boosting antioxidants, which is great for the Winter months when we’re indoors more often and having large gatherings.

 

1 tablespoon champagne vinegar

½ teaspoon Dijon mustard

½ teaspoon raw honey

¼ teaspoon sea salt

¼ teaspoon ground black pepper

2 tablespoons extra-virgin olive oil

3 ounces baby arugula

2 grapefruit, segmented

1/3 cup toasted walnuts

¼ cup shaved Ricotta Salata or similar cheese

 

In a small bowl, whisk together champagne vinegar, Dijon and honey, salt and pepper until combined. While whisking, drizzle olive oil until combined. Set aside.

 

In a large bowl toss together arugula and drizzle with the desired amount of the champagne vinaigrette. Divide arugula among 4 plates. Top with grapefruit, walnuts, and Ricotta Salata. Serve immediately.
