Brussels Fennel and Pear

Makes 4 servings

This super simple saute tastes indulgently delicious. We’re nearing the end of the winter season, so let’s capitalize on all the nutrients for the remainder of the season! These three combined are packed full of anti-oxidants, help inflammation, vitamin C, fiber, and many more nutrients! It’s super simple and quick to put together. Use it as a side for chicken or salmon and serve for a complete dinner that you and your family will keep coming back to!

 

1 tablespoon avocado oil

½ large fennel bulb, sliced thinly

1 cup trimmed and quartered Brussels sprouts

1 small pear, cored and sliced thinly

½ teaspoon sea salt

¼ teaspoon ground cardamom

¼ teaspoon ground allspice

¼ teaspoon ground black pepper

1 tablespoon champagne or white wine vinegar

1 tablespoon unsalted grass-fed butter

2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh chives

1 tablespoon fennel fronds

 

 

Heat oil into a large skillet over medium-high heat. Add fennel and cook for about 6 minutes until browning begins and the fennel softens. Add Brussels and cook for about 2 minutes or until golden brown. Add the pears, salt, cardamom, allspice, and black pepper. Cook pears until softened, about 3 minutes. Add vinegar, stir to combine and finish with butter, stirring until melted.  Lastly, stir in parsley, chives and fennel fronds until combined. Serve immediately.
