Cucumber Tomato Salad

Makes 4 servings

Sweet, light, decadent, and juicy, this salad is a perfect way to end your summer day, keeping you cool and refreshed, but full and satisfied!

Serve this alongside some freshly grilled snapper or chicken breast.

 

1 English cucumber, sliced

2 medium heirloom tomatoes, sliced

1/2 cup Farmer’s cheese

1 teaspoon lemon zest

1/4 teaspoon sea salt

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh chives

2 tablespoons lemon juice

1 teaspoon Dijon mustard

1 teaspoon honey

1/4 teaspoon sea salt

1/4 teaspoon ground black pepper

3 tablespoons extra virgin olive oil

 

On a large plate, layer the cucumber and the tomatoes.

 

In a small bowl stir together the farmer’s cheese, lemon zest, and salt until combined. Dollop the cheese over the tomatoes and cucumbers. Sprinkle with the dill and chives.

 

In a small bowl, whisk together the lemon juice, mustard, honey, salt, and pepper until combined. Gradually, whisk in the oil until combined. Drizzle the mixture over the cucumbers and tomatoes and serve immediately.
