Shrimp Remoulade Salad

Makes 4 servings

This recipe is perfect for the summer months when it’s hot and humid outside and all you want is something cooling…the salad with the fresh vegetables and the hint of spice in the Cajun spice mixture will keep you cool all summer long!

 

For the Salad:

3/4 pound large shrimp, peeled and deveined

1 tablespoon Cajun seasoning (recipe follow or store-bought)

1 1/2 cups chopped andouille sausage

2 cups sliced okra

1/2 cup chopped roasted red peppers

1/2 cup sliced red onion

1 cup halved cherry tomatoes, halved

4 cups mixed greens

1/4 cup sliced green onions, green part only

 

Heat avocado oil in a large cast iron over medium-high heat. In a medium bowl stir together 1 tablespoon of the Cajun seasoning with the shrimp. Add the shrimp to the pan and cook, about 3 minutes per side until or no longer translucent and cooked through. Remove from the pan with a slotted spoon.

 

Add the andouille sausage to the pan and cook until warmed and browned. Add the okra, and stir occasionally, cooking until lightly charred and tender. Remove from the pan.

 

In a large bowl, stir together, the shrimp, sausage, okra, red peppers, red onions, tomatoes, and the mixed greens until combined. Divide among 4 bowls or plates and drizzle with the remoulade dressing and sprinkle with the green onions and serve immediately.

 

Remoulade Dressing:

3/4 cup mayonnaise

2 tablespoons concentrated tomato paste

2 tablespoons chopped capers

2 tablespoons chopped fresh green onions

1 tablespoon chopped fresh parsley

1 tablespoon Worcestershire sauce

1 tablespoon Creole or Stone Ground mustard

2 teaspoons red wine vinegar

1 teaspoon Cajun seasoning

1 clove garlic, minced

1/2 teaspoon celery salt

1/4 teaspoon kosher salt

2 tablespoons water

 

In a small bowl stir everything together until combined.

 

Cajun Seasoning:

Makes about 1/3 cup

1 tablespoon Spanish paprika

2 teaspoons kosher salt

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon celery salt

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon chipotle pepper

1 teaspoon cayenne

1 teaspoon crushed black pepper

 

In a small bowl stir all ingredients until combined.
