Warm Bacon and Apple Brussels Sprouts

Crunchy bacon, warm Brussels sprouts and sweet apples make this a perfect fall or winter side

Serves 4 Prep Time: 15 minutes Total Time: 30 minutes

 

4 slices thick cut bacon, such as 365 (no nitrates or nitrites)

1 large shallot, thinly sliced

1 ½  pounds Brussels sprouts, trimmed and quartered

1 small gala or pink lady apple, thinly sliced

½ teaspoon sea salt

½ teaspoon ground black pepper

½ teaspoon ground nutmeg

1 tablespoon organic apple cider vinegar, such as Bragg’s

2 tablespoons fresh chopped parsley

 

In a large skillet over medium heat, cook bacon until crispy. With a slotted spoon remove bacon from pan onto a plate or a bowl, set aside. Add shallots, reduce heat to medium low and cook until shallots are lightly caramelized, about 5 minutes. Remove from pan and with slotted spoon and add to the plate with the bacon. Add Brussels, apples, salt, pepper and nutmeg; increase heat to medium high, cook for about 8 minutes until the Brussels are golden brown, cover with a lid and cook 2 minutes more until Brussels are crisp tender, remove lid. Add vinegar, cook until reduced by half; stir in shallots, bacon and parsley. Serve immediately.
